Mediteranean Stews Part 2 - Lamb



Guisos II – Cordero de Extremadura
Como ahora sale al mercado carne de cordero de la nueva temporada, no podía resistirme en preparar este guiso.  Salió tan bien que he vuelto a hacerlo después de dos días. 
Primero hay que dorar los trozos de cordero.  Uso la parte del hombro, que una vez cocido, es muy tierno, y sin nervios.  La salsa consiste de cebolla, ajo, pimentón, hierbas buenas, comino, pimientos asados, chili, y el secreto, CALDO de TERNERA, y un poco de mermelada amarguita.
Lo importante es que tiene que dejarlo cocer por tres horas y media en la salsa con algo de patatas y zanahorias.  No te va a defraudar, el guiso sabe a Norte de África y de la buena tierra.
Aunque en la foto no parece muy apetecible, pero os aseguro que es totalmente comestible.   
Stews II - Lamb Stew from Extremadura
Since new season lamb is coming onto the market, I could not resist in preparing this stew.  It went so well that I made the same stew two days later.
You must first sear the pieces of lamb.  Use the part of the shoulder, which once cooked is very tender, and without tendons.  The sauce consists of onion, garlic, paprika, herbs like oregano, cumin, red roasted peppers, chilli, and the secret ingredient, BEEF BROTH, and a little bitter-sweet marmalade.
What is important is that you have to let it cook for three and a half hours in the sauce with some potatoes and carrots.  This will not disappoint, the stew is filled with the aroma and taste of North Africa and the good earth.
Even though the photo doesn’t look too appetising, but I assure you that it is edible.
